Presentation
Facing east, “Meurtet” plot basks in the gentle morning sun. The young vines on this plot ensure generous yields and a consistently refined expression. This single-varietal cuvée, the very embodiment of elegance, stands out through its presence, delicately combining fruit and minerality in a remarkably delicate harmony. A magnificent example of the beauty of the Aÿ terroir, with the surprising and alluring salinity of its great Pinot Noirs.
Spirit of the cuvée
A single-vineyard, single-varietal cuvée made entirely from Pinot Noir, “Meurtet” is the pure expression of a specific place in Aÿ. Facing east on a 15% slope, this 6-acre plot, planted in stages between 1990 and 2006, draws its uniqueness from a subsoil of colluvial deposits and Tertiary flint. On a neighbouring plot just a couple of hundred feet from La Côte Glacière, a different character emerges: a vibrant yet silky expression of Pinot Noir, more restrained, with a slower progression towards maturity.

The 2019 vintage is characterised by great elegance, freshness and richness, resulting in an expressive and delicate wine, enhanced by the unique characteristics of the Aÿ terroir.
In 2019, exceptional weather conditions on the Meurtet vineyard parcel yielded grapes of outstanding quality, blending generous fruit, vibrant freshness and remarkable finesse.

A tribute to William Deutz, Meurtet 2019
The hue is pale gold. The nose, expressive and precise, opens with vibrant red fruits (redcurrant, wild strawberry) before evolving into mirabelle plum, apricot and yellow peach, enhanced by a hint of mango. With aeration, delicate sweet spice notes and a brioche character reminiscent of frangipane emerge. On the palate, the attack is fresh and vibrant, carried by a silky roundness. The characteristic salinity of Aÿ Pinot Noirs carried through to a finish marked by mouth-watering bitters.

The 2019 Meurtet cuvée, a true gastronomic champagne, reveals its full potential when paired with a salmon loin prepared with a delicate balance of smoking and a gravlax-style marinade. The salmon’s silky, melt-in-the-mouth texture finds balance in the wine’s full-bodied structure and depth. The fish’s subtle smokiness resonates with the wine’s spicy nuances, whilst the gravlax’s natural freshness highlights the cuvée’s tension and precision.
